At Cask & Proof Roasters, we do something most roasters don't: we age our coffee in authentic spirit casks. Born in Orillia, Ontario, our process draws on the same patience and craftsmanship that defines fine barrel-aged spirits — applied to every single bag of coffee we produce.

We start with meticulously sourced green beans, then rest them in genuine spirit casks, where they slowly absorb the rich, complex character of the wood and spirit. The result is a distinctively bold, non-alcoholic roast with a depth and profile you won't find anywhere else.

Every batch is a celebration of local craft culture and time-honored tradition — from the initial char of the barrel to the final roast. We believe great coffee deserves time, patience, and an uncompromising dedication to getting it right.
